“Remontage” consists in pumping up the wine from the bottom of the vat in order to sprinkle the “cap” (grape skin and pips which rise to the surface). The process optimises the extraction of colour and tannins.

It is based principally on the quality of the soil, the altitude, the micro-climate, and the method of cultivation of the vine in each parcel. Named after the emblematic cedar tree that dominates the terrace of Quinta do Noval, Cedro do Noval is an authentic expression of the Douro. Principally made up of classic Portuguese varieties, it also contains a proportion of Syrah, which rounds out the fruit and gives the wine enormous charm and accessibility.

GRAPE VARIETIES

Cedro do Noval is a blended wine using the noble grape varieties of Douro and Syrah. We planted our first Syrah grapes in 2000. Syrah adapts perfectly to Douro and expresses the characteristics of the soil rather than its specific varietal flavour. 


WHERE THE GRAPES COME FROM
All grapes come from the Quinta do Noval vineyard. 


VINIFICATION
We use the “remontage” method for wine in stainless steel vats, with temperatures held at 26ºC. 


MATURING
All wine is matured in French oak casks for approximately 18 months.
